Simple food when you're recovering from illness or just feeling a bit under in general. Easy to digest and 'warming' for the body.
Jook is the Cantonese pronounciation, I forget the Mandarin. Ideally you should use long grain rice, but that is not readily available in Japan.
Japanese 'okayu' leaves the rice grains generally intact instead of boiling it down, and there is some liquid that acts as a soup. This is different from Chinese rice porridge, which is just a savoury rice version of say, oatmeal porridge.
Fish is another option instead of pork. Stir in bite size pieces of a firm white fleshed fish until just cooked then serve immediately.
Always use white pepper, never black. Not sure why, but black doesn't work!
